Rosemary asparagus soup Sunday

It was an impulse buy at CostCo on Saturday that turned into a quick, easy and really yummy soup on Sunday.

Ingredients:

About a pound of asparagus, steamed. (Reserve the steam water)

32 ounces of chicken stock

some Rosemary leaves

Salt to taste

Lemon to taste (optional)

I steamed a huge bunch of asparagus, chopped it into pieces and combined it with broth – part water from steaming process, part chicken “stock” from last Wednesday’s chicken bake. I added the Rosemary and simmered the soup for about an hour or two. Then, I blended it all on “liquefy.”  I added the salt and lemon per bowl, to each person’s taste.

Healthy, fresh, easy and so good! Is this really cooking?!
